Some evenings call for something tangy and crunchy, but nobody wants to fry anything or stand at the stove. This millet bhel takes about five minutes and needs no cooking. It swaps regular murmura for roasted millets, which bring a nutty crunch to a familiar snack.
Why this recipe works
- There is no cooking.
- It uses everyday kitchen ingredients.
- It is easy to make mild for children or spicy for adults.
- Our Roasted Mix Millet brings ragi, bajra and jowar into one bowl.
Ingredients (serves 2)
- 1 cup Roasted Mix Millet
- 1 small onion, finely chopped
- 1 small tomato, deseeded and chopped
- ½ cucumber, finely chopped
- 2 tablespoons roasted peanuts or roasted chana
- 1 tablespoon green chutney
- 1 teaspoon tamarind chutney (optional)
- Juice of ½ lemon
- ½ teaspoon chaat masala
- 1 tablespoon chopped coriander
- 1 green chilli, finely chopped (optional)
Method
- Add the onion, tomato, cucumber, peanuts and chilli to a large bowl.
- Add the chutneys, lemon juice and chaat masala, then mix well.
- Taste before adding salt, because the chutneys and chaat masala already contain salt.
- Add the Roasted Mix Millet right before serving and toss quickly.
- Top with coriander and serve straight away.
Tips for the best bhel
- Keep it crisp: always add the millet last. If it sits in chutney, it will lose its crunch.
- Avoid too much liquid: remove the tomato seeds and use just enough chutney to coat the mix.
- Add protein: boiled chana or sprouts make it more filling.
- Add sweetness: pomegranate or chopped raw mango works well.
3 easy variations
- Tiffin-style bhel: pack the dry and wet ingredients in separate small boxes, then mix at lunch.
- Corn bhel: add a few spoons of boiled sweet corn.
- Mild kids’ bhel: skip the chilli, use less chutney and add grated carrot.
Frequently asked questions
Can I make millet bhel in advance?
Chop the vegetables in advance and keep them in the fridge. Mix everything only when you are ready to eat.
Can I use other millet snacks?
Yes. Roasted Ragi Poha and Roasted Jwar both work well. Each one gives the bhel a different texture.
Is millet bhel suitable for children?
For older children, yes. Leave out the chilli and check that they can safely eat peanuts. Whole peanuts are not suitable for very young children.
Is this recipe vegan?
It can be, as long as your chutneys and chaat masala do not contain dairy. Check your own ingredients.
